Team Oso Style Ceviche

Use Fresh Red Drum, or Black Drum fillets. Cut out bloodline and cube into dime to quarter size chunks.

Marinate fish cubes for 24 hours in fresh squeezed lime juice

Cut tomatoes, cilantro, one jalapeno, onion and make into a Pico de Guyo consistency. somewhat chunky not pastey. Add one jar of sliced green olives with pimento into pico.

After 24 hours mix fish chunks to pico and add a tad bit of the lime juice.
